Greek Style Feta Salad
This light citrus filled Greek Style Feta salad is perfect as a main or a side, and ideal for those warm summer nights and curing those holiday blues.
What you need to get
- 1 tray VeeTee Wholegrain Brown Rice
- 100g Feta cheese, crumbled
- 8 cherry tomatoes, quartered
- 3 spring onions, finely sliced
- 10 black olives, halved
- ¼ cucumber, diced
- juice of ½ lemon
- 1 tsp oregano
- 200g tinned mixed beans, drained
- salt & pepper to taste
- 1 lemon to serve
What you need to do
- Heat the VeeTee Wholegrain Brown Rice according to pack instructions.
- Meanwhile, place the remaining ingredients in a bowl, add the cooked rice and combine thoroughly, serve immediately drizzled with freshly squeezed lemon juice.
Tips: This is a perfect accompaniment to grilled fish - salmon, sea bass or mackerel are the ideal complements.
