Roasted Poblano Creamy Rice Bowl

What you need to get

1 tbs olive oil
2 tbsp. onions chopped
1 cup roasted poblano peepers clean and chopped
1 package VeeTee Long Grain Rice cooking according to directions
2 tbsp. butter
1 cup sweet corn
1/2 cup sour cream
1/2 cup monterrey Jack shredded cheese
Salt and pepper to taste
1 tbs. fresh cilantro chopped

What you need to do

Heat a skillet on medium high, add olive oil, onions, and roasted poblanos peppers, cook for 2 minutes, add rice, butter and sweet corn. Mix all ingredients well. Add sour cream and chess and stir until all ingredients are well combined. Season with salt and pepper, garnish with cilantro and enjoy!
