Curried Basmati Rice and Peas

This Indian inspired side dish developed by Chef Judith Choate is a wonderful accompaniment to any Eastern fare.

What you need to get

2 trays VeeTee Basmati Rice
2 cups frozen peas, thawed and well-drained
½ cup chopped scallions
¼ cup chopped cilantro
½ cup olive oil
3 tablespoons fresh lemon juice
1 tablespoon hot curry powder
½ teaspoon ground cumin
½ teaspoon ground turmeric
Pinch cayenne pepper
Salt

What you need to do

Heat the rice mixture according to package directions. While still warm, transfer to a medium mixing bowl.  Add the peas, scallions, and cilantro, tossing to blend.
Combine the olive oil, lemon juice, curry powder, cumin, turmeric, and cayenne is a small bowl and whisk to combine.  Pour the dressing over the rice mixture, season with salt, and stir to blend completely.
Tips: Serve at room temperature as a side or as a base for grilled fish, shrimp, pork, or chicken.
