Cilantro-Lime Grilled Chicken Fajita Bowls

This easy weeknight dinner or prep-ahead lunch comes together in no time thanks to VeeTee rice! Packed with a mix of crunchy veggies, juicy chicken, and a super-flavorful drizzle sauce; you can enjoy these healthy, delicious bowls warm or chilled.

What you need to get

Bowl Ingredients
2 boneless skinless chicken breasts
1/2 tsp kosher salt
1/8 tsp black pepper
1/2 tsp cumin
1/2 tsp garlic powder
1/4 tsp chili powder
1 package VeeTee long grain rice, cooked according to package directions
1 15 oz can black beans, rinsed and drained
1 cup mixed chopped peppers
1 cup halved cherry tomatoes (or chopped tomatoes)
1/2 avocado, sliced
Chopped scallions and cilantro for garnish

Cilantro-Lime Vinaigrette Ingredients
1 TB fresh lime juice
1 tsp lime zest
1 tsp cumin
1 tsp chili powder
1/2 tsp honey
1/2 tsp kosher salt
3 TB olive oil

What you need to do

Season chicken breasts with salt, pepper, cumin, garlic powder, and chili powder. Heat a grill or non stick grill pan over medium-high heat and cook chicken for 4-5 minutes per side or until firm to the touch and cooked through. Let chicken rest on a cutting board.

Arrange VeeTee rice, black beans, peppers, tomatoes, and avocado in two serving bowls or storage containers. Slice chicken and add to bowls. Garnish with cilantro and scallion.

Whisk together all Cilantro Lime Vinaigrette ingredients and drizzle evenly across both bowls. Season to taste with salt, pepper, and optional hot sauce. Enjoy warm or chilled.
Tips: Feel free to swap in other chopped or cooked veggies here such as corn, jalapenos, zucchini, chopped spinach, or roasted cauliflower. You can also use pre-cooked chicken breast to make this dish in under 5 minutes!
