Chicken Pepper & Pesto Rice

Quick and delicious Italian stir-fry recipe.  "Italian stir-fry?", you ask? You heard us right!

What you need to get

1 tray of VeeTee Basmati Rice
2 tbsp olive oil
1 small red onion, sliced
1 garlic clove, crushed
1/4 cup red pepper, sliced
1/4 cup yellow pepper, sliced
1/4 cup green pepper, sliced
1 cooked chicken breast, shredded
1/4 cup  red pesto paste
8 fresh basil leaves, chopped
Salt and black pepper

What you need to do

1. Heat  the oil then add the oniong and garlic to the pan, frying for 1 minute.
2. Add the peppers and stir-fry for 1 minute. Add the chicken and seasoning, then stir-fry for a further minute.
3. Add the pesto, half of the basil and the tray of rice, then cook through for 2 minutes or until hot.
4. Serve immediately garnished with the other half of the basil.
