Basil Orange Chicken Rice Salad

An easy and quick recipe for busy people but a very refreshing and healthy meal! The orange flavor brightens this dish making it a perfect lunch or dinner in springtime or summertime.

What you need to get

1 package VeeTee Thai Jasmine Rice
2 tablespoons Chopped fresh basil leaves
Salt to taste
1 cup Grilled or baked shredded chicken breasts
1 cup Store bought chopped salad mix (dressing attached to the package is not used)
1 medium-large Navel orange
1 tablespoon Sherry vinegar
1 teaspoon Olive oil
1/2 teaspoon Honey (adjust the amount based on how sweet your orange is)
Salt and black pepper to taste

What you need to do

1. Cook rice according to the package directions. Then transfer the rice into a medium-large bowl. Add basil and mix to combine. Add salt to taste.

2. Make orange vinaigrette. Juice orange (you need 6 tablespoons of juice) and zest orange (you need 1 tablespoon of zest). Put orange juice into a small bowl, add sherry vinegar, olive oil and honey, and mix to combine.

3. Add chicken, chopped salad mix, orange zest and orange vinaigrette to the bowl of the rice and mix to combine. Add salt and black pepper to taste.
