Greek Style Feta Salad

This light citrus filled Greek Style Feta salad is perfect as a main or a side, and ideal for those warm summer nights and curing those holiday blues.

What you need to get


  • 1 tray VeeTee Wholegrain Brown Rice

  • 100g Feta cheese, crumbled

  • 8 cherry tomatoes, quartered

  • 3 spring onions, finely sliced

  • 10 black olives, halved

  • ¼ cucumber, diced

  • juice of ½ lemon

  • 1 tsp oregano

  • 200g tinned mixed beans, drained

  • salt & pepper to taste

  • 1 lemon to serve


What you need to do


  1. Heat the VeeTee Wholegrain Brown Rice according to pack instructions.

  2. Meanwhile, place the remaining ingredients in a bowl, add the cooked rice and combine thoroughly, serve immediately drizzled with freshly squeezed lemon juice.


Tips: This is a perfect accompaniment to grilled fish - salmon, sea bass or mackerel are the ideal complements.
