Danielle’s Warm Summer Salad

Danielle's Warm Summer Salad is perfect for those hot evenings where you just simply don't know what you want to eat.  Forget the wispy lettuce leaves and opt for our Wholegrain Brown Rice & Quinoa superfood blend as a foundation. It’s a great option for a healthy yet satisfying meal. Most of us have heard of the popular superfood, quinoa, but like rice, it can be tricky to cook. Luckily, this is one of our easiest recipes, requiring nearly no cooking at all. You’ll simply need to pop one tray of VeeTee Wholegrain Brown Rice & Quinoa in the microwave for 2 minutes before mixing in the cold ingredients. It’s a convenient option for quick lunches or speedy dinners, packed full of fresh vegetables.  

What you need to get


  • 1 tray VeeTee Wholegrain Brown Rice &
    Quinoa

  • 1 tin of tuna

  • 1 red pepper, diced

  • 1 yellow pepper, diced

  • ½ cucumber, diced

  • 1 onion, sliced

  • 2 tbsp mayonnaise

  • handful of cherry tomatoes, halved

  • handful of chopped coriander (optional)

  • salt & pepper to taste


What you need to do


  1. Heat the VeeTee Wholegrain Brown Rice & Quinoa according to pack instructions.

  2. Meanwhile, mix together the tuna; all the vegetables and mayonnaise then fold the cooked brown rice and quinoa into the tuna mix. 

  3. Stir in the coriander and season to taste and serve immediately.
