What you need to do

  1. Heat oil in a pan and stir-fry the onion and garlic for 1 minute.
  2. Add the peppers and cook for another minute. Stir in the chicken and season to taste, then cook for a further minute.
  3. Add the pesto, half the basil and Veetee Basmati Rice and cook for 2 minutes or until heated through.
  4. Serve immediately garnished with the remaining basil.

  • 1 small red onion, sliced
  • 1 garlic clove, crushed
  • 1/4 red pepper, sliced
  • 1/4 yellow pepper, sliced
