Beef & Mushroom Rice Bake

What you need to do

1.Preheat oven to 200˚C / Fan oven 180˚C/ Gas mark 6.
2.Add the onion and mince to a pan and fry for 3-4 minutes until browned. Add the mushrooms and peppers, cook until slightly softened, then add the tinned tomatoes. Simmer for 10 minutes.
3.Empty the mixture into an ovenproof dish. Meanwhile, microwave the rice for 2 minutes, then spread over the beef mixture.
4.Top the rice with cheese, then bake for 20-25 minutes.
5.Remove from the oven and leave to cool slightly for 10 minutes before serving.
