Sushi rice is a round, short grain rice variety from Japan which has a very mild flavour and pearlescent appearance, making it the perfect base for sushi dishes, like nori rolls with wasabi paste. In fact, the word "sushi" means "vinegared rice".
Sushi rice contains a lot of starch, which is released when cooked. This creates a super sticky texture, which is perfect to mould into sushi rolls and is often prepared with raw vegetables and seafood like salmon and prawns.
